MARCIA'S BREAKFAST SMOOTHIE

Here are two recipes that will make a
wonderful breakfast for your Valentine!
HOLIDAY BRUNCH EGGS
Ingredients:
- 3 Cans (14 ounces each) stewed tomatoes, well-drained
- 1 Tablespoon Chopped Fresh Basil
- 8 Eggs
- 1 Cup Mozzarella Cheese (Regular or Reduced Fat)
- 4 Whole-grain English Muffins, Split, Toasted
- 1 Tablespoon Chopped Fresh Parsley
- COMBINE tomatoes and basil in a 13 x 9-inch baking dish.
- FORM 8 wells in the tomato mixture.
- CRACK an egg into each well.
- BAKE at 350 degrees F for 25 minutes or until eggs are set.
- SPRINKLE with cheese.
- CONTINUE BAKING 5 more minutes or until cheese is melted.
- SERVE over muffin halves.
- SPRINKLE with parsley.
Makes 8 servings.
MARCIA'S BREAKFAST SMOOTHIE
- Cranberry/Grape Juice
- Orange Juice
- Optional: Fresh or Frozen Strawberries or Blueberries
- ICE
My favorite breakfast drink is 3/4 cup of Cranberry/Grape Juice and 1/4 cup Orange Juice with shaved ice...stirred together in a pretty glass, and served with a straw.
You can make one serving or make "SMOOTHIES" for you and your family in a blender using the same ratio:
- 3/4 of the liquid mixture is Cranberry/Grape Juice
- 1/4 of the liquid mixture is Orange Juice
- Add handful of ICE
- BLEND until desired "SMOOTHIE" consistency
Sometimes I add fresh or frozen strawberries and/or blueberries to the mixture in the blender, and serve it with a spoon and straw.
