This recipe appeared in the February 1995 edition of Country Living Magazine. I began making this one-pan meal in 1995....and I'm making it again tonight!
Ingredients
- 4 Medium Potatoes (Cut into 3/4-inch Cubes and MICROWAVED 8 to 10 minutes until tender)
- 1 Pound Boned and Skinned Chicken Breasts (Cut into 3/4-inch Cubes)
- 2 Tablespoons Olive Oil
- 1 Cup Prepared Tomato Salsa
- 1 Small Can Whole Kernel Corn, DRAINED
- Cilantro (This is something I added to the recipe.)
Directions
- While potatoes cook (in microwave): in large skillet toss and brown chicken in oil over high heat 5 minutes.
- Add potatoes
- Saute and toss all until potatoes are lightly browned. Add salsa and corn...toss until heated through.
- Top with cilantro
Time: 20 Minutes
Servings: 4
