Recipe from: Stephenson's Orchards

This recipe has been one of our family favorites for many years. These fritters are fried in hot oil and are d-e-l-i-c-i-o-u-s! We have one little peach tree in our backyard, and it's a race each year to see who will get the peaches...me or the squirrels.
The original old southern recipe came from our local Stephenson's Orchards, and was served at the Stephenson's Restaurant when it was open. Stephenson's Orchards is a fourth-generation, family owned and operated fruit farm. The fruit operation consists of 40 acres of apples, 25 acres of peaches, a fruit market and on-farm cider mill.
PEACH FRITTERS (Fried)
MIX Dry Ingredients:- 1 Cup Flour
- 2 Tablespoons Sugar
- 1 and 1/2 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Cinnamon
- 1/4 Teaspoon Nutmeg
- Pinch of Ginger
STIR in...
1 Egg
1/4 Cup Milk
2 Tablespoons Melted Buter
2 Tablespoons Drained, Crushed Pineapple
1/4 Teaspoon Vanilla
STIR all ingredients until smooth.
FOLD in 1/4 Cup Diced Fresh PeachesDROP from teaspoon into HOT OIL (about 350 degrees) about 2 minutes...until brown.
DRAIN on paper towels.
ROLL immediately in Powdered Sugar.
