BROCCOLI RICE CASSEROLE
My daughter, Sarah, asked me to make broccoli rice casserole for her birthday. Sarah is a college student who works full time, and she also spoils our four puppies!

This recipe for BROCCOLI RICE CASSEROLE is different from others we've had, and it is now our favorite.
Cook separately: Soup mixture, Celery and Onions, Broccoli, and Rice...Then mix all together and bake in the oven. |
It's not difficult to make, but you use lots of pans, and cook items separately before you mix everything together to bake it.
Cook the broccoli and rice separately, then make a mixture of cream of mushroom and chicken soup plus water and cheese, then cook celery and onions in butter, and finally combine all mixtures and bake in the oven.

BROCCOLI RICE CASSEROLE
- 2 (10 ounce) Packages Frozen Chopped Broccoli
- 3 Cups Instant Rice
- 1 (10.75 ounce) Can Condensed Cream of Mushroom Soup
- 1 (10.75 ounce) Can Cream of Chicken Soup
- 1 and 1/4 Cup Water
- 16 ounces Cheese (Cubed or Shredded) (I used cheddar cheese.)
- 1 Tablespoon Butter
- 1 Bunch Celery (Chopped)
- 1 Large Onion (Chopped)
- Salt and Pepper to Taste
Preparation Time: 30 minutes
Cooking Time: 45 minutes
Ready in 1 hour and 15 minutes
Cook separately: Soup mixture, Celery and Onions, Broccoli, and Rice...Then mix all together and bake in the oven. |
- Preheat oven to 350 degrees.
- Cook Broccoli according to package directions.
- Cook Rice according to package directions.
- Mix and cook Cream of Mushroom Soup, Cream of Chicken Soup, and 1 and 1/4 Cups Water in a MEDIUM SAUCEPAN over low heat.
- Gradually stir in 16 ounces cheese until melted. Be careful that the cheese does not burn.
- Melt butter in a large SKILLET over medium-high heat, and cook and stir celery and onion until soft.
- Add all ingredients in a large mixing bowl: broccoli, rice, soup and cheese mixture, celery and onion...and season with salt and pepper.
- Pour entire mixture into a 9 x 13 inch baking dish. (I had so much that I used two baking dishes.)
- Bake in preheated 350 degree oven for 45 minutes, until bubbly and lightly brown.
