Barbeque
Chicken Corn Bread
recipe makes an entire meal.
It's SO good!
The cornbread has cheese in it,
and I do so LOVE cheese!
The recipe calls for chopped cooked chicken.
I used up the leftover chicken that we grilled the night before.
You probably have everything you need
to make this already in your pantry,
except for the Mexicorn.
Be sure to drain the cans of Mexicorn and olives
before adding to the chicken mixture.

I made the following changes to the recipe:
1. I doubled all the ingredients.
2. I couldn't find my flan pan, so I used a cookie sheet to bake the cornbread. (Two boxes of Jiffy Cornbread Mix fit perfectly on one cookie sheet.)
3. I did not pour the entire chicken mixture over the top of all the cornbread all at once. I cut the cornbread into squares, and let each person add the barbeque chicken mixture to their individual servings.
